Kitchen Manager at the Swedish Prison and Probation Service in Kalmar

The Swedish Prison and Probation Service is growing – we are building new facilities, renovating, and expanding, and we are now looking for more employees. Our most important goal is to reduce recidivism – to break the vicious cycle. If we succeed, society becomes safer and more secure for everyone. We are the authority responsible for prisons, probation, detention centers, and client transport.

The detention center and prison in Kalmar together form the Kalmar operational area and are therefore organizationally the same unit. Employees working in Kalmar serve periodically at the detention center and prison depending on the needs of the operation. The prison in Kalmar has 77 places in security class 2, it is the oldest in the country and was built in 1852. The detention center in Kalmar has 50 places. The detention center and prison are located in central Kalmar, just a few minutes' walk from the central station. The Kalmar operational area currently has about 130 employees.

The Swedish Prison and Probation Service in Kalmar is expanding. We have several new establishments planned for the coming years, including prisons in security classes 2 and 3 and a completely new detention center. Today, the central kitchen operates from the current prison in Kalmar. Over the next 5-6 years, our kitchen organization in Kalmar will need to grow as new units open in 2026 and 2027. By 2030, a new prison will be completed in the southern part of Kalmar municipality, and the entire central kitchen will then operate from there in completely new kitchen facilities with a modern kitchen equipment.

We are now looking for a kitchen manager for the Kalmar operational area who wants to be proactive in our upcoming expansion over the next few years while ensuring that we continue to deliver high-quality food. Well-prepared meals for our clients are essential in the Swedish Prison and Probation Service's security work. As a kitchen manager with us, you will have a very important role in our organization. RESPONSIBILITIES

In your role as kitchen manager, you will lead and distribute the daily work in the production kitchen and have a close collaboration with the correctional officer (first-line manager) who has formal personnel and work environment responsibility for both you and the other kitchen staff (4-7 cooks).

As kitchen manager, you are responsible for planning the menu, orders, quality assurance, invoice management, emergency stock, and purchases within the given budget. Furthermore, you have overall responsibility for self-control and food hygiene according to applicable laws and procedures, where you, in addition to the central kitchen, are also responsible for ensuring that the smaller preparation kitchens in the prison and detention center meet these requirements.

In addition to the administrative parts of the position, you are also expected to contribute to the daily work alongside the other cooks when the need arises, for example, during unplanned staff shortages on the same day. Your working hours are Monday to Friday, daytime with flexible agreements.

Travel and training at other locations may be included in the position, which is why a B driver's license is required.

As a kitchen manager, you are expected to be clear and have a humble and inclusive leadership style where all kitchen staff are seen and where you identify the strengths of the cooks to achieve the best results in cooking. You are calm and controlled in stressful situations and are naturally structured in your work. We see that you are solution-oriented and positive by nature and see opportunities.

Requirements:

  • Complete restaurant or large-scale kitchen education at the high school level or other education combined with experience that the Swedish Prison and Probation Service deems relevant.
  • Experience in a supervisory role in a kitchen/large kitchen.
  • Experience in handling invoices, orders/purchases.
  • Good knowledge of food hygiene and self-control.
  • Good knowledge of special diets and allergies.
  • Good knowledge of the Swedish language in both spoken and written form.
  • Good computer skills.
  • B driver's license.

Meritorious:

  • Management training/leadership training.
  • Experience in budget and work environment responsibility.
  • Other further education in kitchen/cooking/restaurant that the Swedish Prison and Probation Service deems relevant.
